As we bid farewell to summer and welcome the autumn, April stands as a pivotal month in Australia. With its crisp mornings, mild days, and cool evenings, April epitomises the essence of the autumn season in this part of the world. But beyond the changing colours of the leaves, April in Australia offers a tapestry of events, celebrations, and historical significance.

In April, the days may be shorter, but they are pleasantly mild, making it an ideal time for outdoor activities. One of the most significant events of April is ANZAC Day, observed on the 25th of the month in both Australia and New Zealand. This day commemorates the courage and sacrifice of the Australian and New Zealand Army Corps (ANZAC) who fought in World War I, and honours all servicemen and women who have served their countries in times of conflict.

Coffee Cake Recipe
Ingredients
- 1.5c sugar
- 2 large eggs, at room temperature
- ¾c plain unsweetened yoghurt
- 1c vegetable oil
- 1t vanilla essence
- 1-2 shot espresso coffee to taste (or 4T hot water with 2T instant coffee dissolved in hot water)
- 2c flour
- 2t baking powder
- ½t baking soda
- Pinch salt
Icing
- 1c icing sugar
- 25g soft butter
- 1 shot espresso coffee or 2t hot water and 1t instant coffee
- A little hot water to mix
- Walnuts for garnish
Method
- Beat the sugar and eggs well
- Add the yoghurt, oil, vanilla, and coffee gradually
- Fold in the sifted dry ingredients gently
- Bake in a greased 21cm tin (175 degrees in a classic bake oven for 50 minutes. Or 155 degrees for 60-70 minutes fan assist)
- Remove as soon as a skewer comes clean and the cake springs back in the centre
- Prepare the icing by combining all ingredients
- Spread icing on top of the cake when cooled, and sprinkle with fresh walnuts.
